Spaghetti with Curry Meat Sauce: A Malaysian Style Bolognese Pasta, Spaghetti A La Malaysia

Spaghetti With Curry Meat Sauce is a delicious and easy recipe to cook pasta at home with a wonderful homemade taste. The pasta meat sauce is spiced up with a curry paste seasoning and fragrant fresh curry leaves are added to give this curry meat pasta sauce a truly Malaysian twist.
 
All that is needed is to cut the vegetables and other ingredients into bite size before cooking the meat sauce. Then about 15 minutes before the sauce is done, cook the spaghetti or any other pasta you like. Serve the flavourful curry pasta sauce over the drained spaghetti. And we are done!
 
This spaghetti sauce recipe is actually adapted from Spaghetti Bolognese of Italian origin, but adjusted to our Malaysian taste. Some of my friends who have tasted this says why not call this dish Spaghetti A La Malaysia, which I think is not a bad idea! 🙂

How To Make Meat Pasta Sauce

The secret to making a great meat sauce is to build layers of flavour and allow the meat and vegetables to blend together in a balanced way.  That’s why many kinds of ingredients are used and simmered for this purpose. It is important to chop and dice vegetables small as this will render the vegetables tender and easier to cook.
 
The kind of meat to use is totally up to you. Mince/ground pork, chicken or beef works well in this meat sauce. The meat sauce is cooked, simmered in a large pot for about 30 minutes till vegetables turn tender, the meat cooked and the sauce thickened significantly.
 
As the curry pasta sauce cooks, stir and taste the sauce a few times so you can adjust the seasoning accordingly. Then stir in the grated cheese and the meat sauce is ready to use.

How To Store The Curry Meat Pasta Sauce

The curry meat pasta sauce can be prepared ahead of time. It can be refrigerated for up to three days and stored in the freezer for about three months. Use freezer safe containers or double layers of freezer bags to store the sauce. To thaw, just leave it overnight in the refrigerator and warm up the next day.

How To Cook Spaghetti: Important Tips To Make Good Pasta

Check the package directions of the pasta you plan to cook. Boil the pasta for 1 minute less than what the package directions state and check for al-dente, which means the pasta is just fully cooked and still firm, but not mushy. It will still have a bit of a bite, which is perfect.
 
One of the best way to test for al dente is by tasting it, or you can break the pasta with your fingers to test the texture. Al dente pasta should be tender but firm to touch, with a semi firm bite and a faint white core in the center.
 
Cook the spaghetti in salted water. The pasta water should taste salty. This seasons the pasta as it cooks and is necessary for the best-tasting pasta. Use about 1 tbsp of salt to 4 litres of water and a packet of pasta about 400g.

Some Ways To Use Curry Meat Pasta Sauce

This homemade flavourful meat sauce can be used in many different ways. We can serve it with spaghetti or any other pasta you like.
 
You can even use it as a pizza topping when making pizza at home. For this purpose, just reduce the liquid in the sauce.

Important Cooking Tips For This Spaghetti with Curry Meat Sauce Recipe

  1. Always cook the sauce before cooking the pasta. This is because as the pasta sits, it will keep absorbing any water around it and this will change the texture of the perfectly cooked pasta.
  2. Cut all the vegetables into small bite size before cooking. This will enable the vegetables to cook faster and stay tender.
  3. Simmer using low heat till the liquid has reduced and the meat sauce has thickened before adding in grated cheese.
  4. Before cooking the spaghetti, always check the suggested time required to cook the pasta on the box. Then while cooking, check on the spaghetti a minute early to see if its done yet. It is always a good idea to check the pasta early to prevent over done and is al dente.
  5. When cooking spaghetti, make sure the water should taste pretty salty. This adds flavour to the pasta and allows the pasta to cook better. Do not add oil to the water as this will prevent the meat sauce from sticking to the pasta when you eat it.

Spaghetti with Curry Meat Sauce (Malaysian Style Bolognese) is just so delicious, with a unique Malaysian flavour. This curry pasta sauce recipe may just be your new favourite!

Ingredients
 

Ingredients:

  • 400 grams spaghetti, cooked till al dente, 12 minutes
  • 1 tbsp salt
  • 4 tbsp butter, 57 grams

Curry Meat Sauce Ingredients:

  • 150 grams butter
  • 400 grams minced meat, minced pork/chicken/beef
  • 1 litre water
  • 1 tbsp chicken stock granules
  • ½ tin button mushrooms, 10 pieces, slice into thin slices
  • 2 sticks celery stem, dice
  • 4 tomatoes, deseed, dice
  • 2 carrot, dice
  • 5 tbsp meat curry powder
  • 5 tbsp water
  • 3 stalks curry leaves
  • 4 pips garlic, chopped
  • 3 big onions, dice
  • 50 gram tomato puree, ½ small tin
  • 200 grams cheddar cheese, grated
  • 1 tbsp salt, to taste
  • 1 tsp ground pepper, to taste

    Instructions
     

    Preparing Meat Sauce Ingredients :

      Have ready all ingredients needed to cook the meat sauce.
    • Dice all vegetables.
      Start by cutting all the vegetables into small pieces. Dice button mushrooms, carrots, celery and tomatoes.
    • Mince garlic, dice onion and meat.
      Then chop garlic, dice big onions and minced some meat.
    • Make curry paste and stock.
      Next, prepare the curry paste by adding water into meat curry powder and stir into a paste. Then prepare chicken stock by dissolving chicken stock granules into the water. Otherwise you can just use water. And we are ready to cook the meat sauce.

    To Cook Curried Meat Sauce:

    • Cooking spaghetti sauce.
      First, melt butter in a pan. Fry chopped garlic and big onions. Then add the curry leaves and meat curry powder. Fry until fragrant using medium heat.
    • Then add in the meat, stir well. Cook for 10 minutes. Add tomato purée, chicken stock and all the diced vegetables. Bring to a boil. Cover and simmer over low heat for 30 minutes till all the vegetables become tender and the meat just cooked. Stir constantly throughout the process.
    • Then stir in half the grated cheese. Add salt to taste. Stir to make sure the cheese fully melts and everything is well mixed. And we are done! Just before the sauce is cooked, prepare to cook the pasta.

    To Cook Spaghetti:

      First have ready all ingredients needed.
    • Cook spaghetti
      Boil half a saucepan of salted water over high heat. Add spaghetti and stir during the first few minutes of cooking to keep it from sticking together. Boil pasta for 1 minute less that what the package directions state.
    • Test for doneness (al dente) and remove the cooked spaghetti from saucepan. Drain and stir in butter.
