It adds an Asian flavor, combining umami with sweet, tangy, and spicy elements. Steamed Hoisin Ribs In Bamboo Steamer is an Asian flavoured steamed spare ribs dish. The spare ribs are cut into bite size pieces, rinsed well and then marinated with hoisin sauce, fermented bean paste and shaoxing wine for at least one hour. It is then carefully arranged onto a lined bamboo steamer and steamed till the spare ribs turn silky and succulent.

An Overview On How To Cook Steamed Hoisin Ribs In Bamboo Steamer

Step 1: Cut and chopped ingredients.

Cut peeled ginger into strips. Chop red chili and spring onion.

Step 2: Cut Spare Ribs

Cut the spare ribs between the bones into bite size and place into a bowl. When selecting spare ribs, go for cuts that are less fatty (the tail-end ribs). Ask your butcher to get you a piece that has a good ratio of meat to fat.

Step 3: Rinse And Dry Spare Ribs

Add cornstarch and massage to evenly mix the cornstarch around the surface of the ribs. Then rinse the ribs in running water for at least a minute. Then pat dry using kitchen paper.

Step 4: Marinate Spare Ribs

Add in hoisin sauce, fermented bean paste, shaoxing wine and a little cornstarch into cleaned spare ribs. Gently massage to evenly mix. Massaging the ribs, i.e. applying a little bit of pressure, helps the meat absorb the flavors and tenderizes the meat a bit. Cover and leave to marinate for one hour.

Step 5: Prepare To Steam Spare Ribs

Prepare steamer by bringing water in the steamer to a rolling boil. Line a bamboo steamer with aluminium foil. Carefully place the marinated spare ribs onto the lined bamboo steamer. Top with ginger strips and chopped red chilli.

Step 6: Steam Spare Ribs

Carefully place the ribs in the steamer. Cover and steam the spare ribs over high heat for 30 minutes or until cooked.

Step 7: Garnish

When the spare ribs is done, turn off heat. Immediately remove from steamer and garnish the steamed spare ribs with chopped spring onions and Enjoy!

Important Cooking Tips For This Steamed Hoisin Ribs Recipe

  • Mix spare ribs with cornstarch and rinse well in running water to clean the ribs. Rinsing also helps wash away some of the taste of blood so the steamed ribs will taste good.
  • Let spare ribs come to room temperature before steaming. Meat gets tough when cooked cold, so let the ribs rest out of the fridge for at least 30 minutes before steaming.
  • Mixing in cornstarch into the spare ribs helps to protect the meat from powerful steam heat by forming a protective film around the meat hence resulting in tender meat.
  • Cut the ribs into bite-sized pieces, approximately 1.5 cm thick. The technique is to cut the part of the flesh between the bones.

Ingredients
 

Ingredients:

  • 500 grams spare ribs, rinse and cut into bite size
  • 1 tbsp cornstarch, to clean spare ribs
  • 15 grams ginger, peeled and cut into strips
  • 1 stalk spring onion, chopped
  • 1 red chilli, chopped

Marinate:

  • 1 tbsp hoisin sauce
  • ½ tbsp fermented bean paste
  • 1 tbsp shaoxing wine
  • 1 tsp cornstarch

    Instructions
     

    Prepare Ingredients:

    • Prepare ingredients
      Have ready all the ingredients needed.
    • Clean spare ribs.
      First, prepare the spare ribs. Cut the spare ribs into bite size pieces. Then mix with some cornstarch and rinse clean for 1 to 2 minutes with running water. Then pat dry the spare ribs in thick paper towels.
    • Then add some flavours into the spare ribs. To do this, prepare the ingredients to marinate the spare ribs.
    • Marinade spare ribs.
      Mix hoisin sauce and fermented bean paste into the spare ribs. Then add in Shaoxing wine and finally cornstarch. With your hand, slowly and gently massage the ribs around for about 1 minute to evenly distribute all the flavours and the ribs absorb the flavours. Cover with cling wrap and leave to marinate for 1 hour. While waiting, cut all the other ingredients needed.
    • Cut peeled ginger into long strips. Then chopped spring onion and red chillies as garnish. And we are ready to steam the spare ribs.

    Steam Marinated Spare Ribs:

    • Before we steam the marinated spare rib, first prepare the bamboo steamer. Line an aluminium foil over the bottom and side of a medium size bamboo steamer.
    • Prepare marinated spare ribs for steaming.
      Place marinated spare ribs into lined bamboo steamer. Top with shredded ginger and chopped red chilli.
    • Bring water to a rolling boil in wok or steamer. Be sure to add enough water.
    • Steam spare ribs.
      Place spare ribs in steamer. Cover and steam the spare ribs on high heat for about 30 minutes or until cooked. Test for doneness with a chopstick. And we are done!
    • Remove from steamer and garnish with chopped spring onions, extra ginger strips and chopped chillies.
