Braised Pork Ribs With Yam is a delicious savoury one pot dish cooked with yam / taro and pork ribs. This braised spare ribs stew is a popular comfort food dish that you can easily cook at home. Best enjoyed with a bowl of steamed rice.
200gramsyam, peeled, washed and sliced ¼ inch thick
3shallots, cut into thin slices
1tbspdried shrimp, washed and soaked
2cupswater

1tbsplight soy sauce
¼tspdark soy sauce
1tbsp oyster sauce

Preparing Ingredients:
Have ready all ingredients to make braised pork ribs with yam.
Have ready all seasonings needed.
First clean the pork ribs. Rub in some cornstarch and rinse in running water till the water turns clear. Pat dry and then marinate with oyster sauce. Set aside while we prepare the yam.
Peel skin from yam. Give a quick wash, pat dry, cut in halves and slice into ¼ inch thick. Place into a bowl and mix in a pinch of salt. Then set aside.
Prepare the other ingredients. Soak dried shrimp and drained. Peel and cut shallots into thin slices. Wash and cut spring onions into sections for garnishing. And we are ready to cook the dish.
Cook Pork Ribs With Yam:
First heat up some oil in a wok. Place the yam slices in a single layer on the wok and shallow fry till slightly brown. Dish out and drained off oil.
Then place a claypot on the stove and heat up some oil. Sauté the sliced shallots till fragrant. Then add in dried shrimp and continue to fry till the dried shrimp starts to pop. Next add in the pork ribs and fry till pork ribs are slightly seared on the outside and well mixed with the shallots and dried shrimp. Finally add in water, about 2 cups or till all the pork ribs are fully submerged. Bring to a boil. Then cover with a lid and allow to simmer on medium heat for 30 minutes, till the pork ribs are softened, stirring occasionally throughout the cooking process.
After 30 minutes, when the pork ribs are a bit soft, remove the lid and add in the yam pieces followed by light soy sauce and dark soy sauce. Stir to mix and continue to cook / braise on low heat till the pork ribs and yam are tender soft, another 15 minutes.
When done, turn off the heat, give it a quick stir and garnished with the cut spring onions. And we are done!

Use the larger variety of yam/taro, rather than the smaller ones. Larger variety of yam are more flavourful and have a unique flaky texture. Smaller yam tend to be a bit slimy so best to avoid to cook this dish.
Lightly fry the slices of yam before cooking to ensure they keep in shape during braising with pork ribs.
The pork ribs should be fully submerged in the liquid at the beginning and the sauce should reduce slightly but the braised pork ribs should still look a little soupy after simmering so add more water if needed.
Make sure there is enough water for yam to cook through as the yam absorbs a lot of water.
