Matcha Green Tea Milk Bread is a flavourful bread to serve for breakfast and you can easily make using your bread machine. This homemade milk bread is soft, light and fluffy with earthy green tea flavour and amazing texture from chopped walnuts. Great for sandwiches, making matcha french toast or snacking just as is.
Toast walnuts in a skillet over medium heat for 2 to 5 minutes. Then remove, coarsely chop and set aside.
Baking Matcha Milk Bread:
In a bread pan, first add in milk followed by slightly beaten egg, butter, salt, sugar and bread flour. Then add in matcha powder and lastly yeast.
Lock the bread pan into position in the bread machine and close the lid. Set menu to SWEET LOAF setting and medium crust. At 8 minute before the end of second knead, the bread machine will beep. At this time add in the chopped walnuts.
Then the bread dough will undergo 1st rise, punch down and 2nd rise.
After the 3rd rise, the bread dough will start to bake. And we are done!
Remove bread from pan onto a cooling rack. Sprinkle with sifted icing sugar and allow to cool completely before slicing into pieces.

Try to use bread flour instead of all-purpose flour to bake bread if possible. Bread flour has more protein than all-purpose flour, which produces more gluten. The higher amount of gluten in bread flour leads to a more elastic dough.
When baking homemade bread, it's best to use a precision scale to weigh the ingredients. This will prevent overpacking of flour, resulting in a denser bread than desired.
Use a good quality matcha powder to enhance the overall fragrance of the matcha milk loaf.
Allow the baked bread to cool completely before slicing.
Do not open the bread machine lid when the bread dough is in the cycle of proofing and baking.
