This Deep Fried Tom Yam Chicken is so juicy and bursting with such amazing flavours. This Asian style fried chicken is marinated with Tom Yam paste and then deep fried to perfection.
Wash and clean chicken whole legs. Debone and chop into pieces.
Shred finely kafir lime leaves and chop lemongrass. Set aside for later use.
Marinate Chicken:
Have ready all ingredients needed to marinade chicken.
First add fish sauce, sugar and tom yam paste into the chicken pieces and mix well.
Then add in chop lemongrass, karfir leaves, eggs, plain flour, cornflour and cooking oil. Combine everything together making sure the flour fully coat the chicken. Set aside to marinate for about 3 hours. And we are ready to fry the chicken.
Deep Fry Tom Yam Chicken:
Heat up oil in wok for deep frying. Oil is ready when bubbles appear around a wooden chopstick when immersed in the oil. Deep fry the marinated chicken in batches (if needed).
Deep fry till chicken turns golden brown and cooked through. Drain the fried chicken on paper towel. Then transfer to serving plate.
To Garnish:
To garnish, shred an onion and cut a lime.
Place the fried chicken on serving plate lined with fresh lettuce, garnish with shredded onion and top with a little lime juice to Enjoy!
Tom Yum Paste is already salted, depending on the amount of the paste that you use, you have to reduce the amount of fish sauce used, which is also very salty.
Taste-test the chicken marinade for salt and spice, adding more fish sauce if you'd like it saltier or more Tom Yum paste if you'd like your chicken spicier.
Leave the marinated chicken to cool to room temperature before deep frying for best results.
