Yam bean is the star for this dish. Stir-fried yam bean can be used in many ways. It can be eaten with rice or wrapped in fresh lettuce leaves as a salad. It can also be used as fillings for buns, spring rolls (popiah) or pie tee. Just leave to cool to room temperature, then refrigerate until needed.
When buying yam bean, always choose those that are firm and dry. The skin should not appear shriveled, bruised or blemished.To store yam bean, keep them unpeeled in a plastic bag in the refrigerator for up to two weeks.
